Characterized by a clear acidity (sour taste), the light yellowish and clear liquor gives a pleasant sour taste the moment you put it in your mouth. Although it is glutinous rice wine, it is refreshing and light without feeling heavy. The glutinous rice is soaked in water for a long time, and then only the rice is steamed after discarding the soaked water. Soak in water for 3 days in summer and almost 10 days in winter. This creates a clean acidity in the alcohol.
