Characterized by a clear acidity (sour taste), the light yellowish and clear liquor gives a pleasant sour taste the moment you put it in your mouth. The glutinous rice is soaked in water for a long time, and then only the rice is steamed after discarding the soaked water. Soak in water for 3 days in summer and almost 10 days in winter. This creates a clean acidity in the alcohol.
